Recipe- Bean Sandwich
Ingredients
Bread Bun (Long or Round type) 6 nos
Cucumber 1 large (Sliced)
Salt 1 tsp or as per taste
Crushed Black Pepper 1 tsp
For Cutlets
Lobia/ Black eye bean 0.5 cup
(Finely chopped)
(Finely chopped)
(Finely chopped)
Salt 1 tsp or as per taste
Roasted Jeera Powder/ Bhuna Jeera Powder 1 tsp
Crushed Black Pepper 1 tsp
Red Chilli flakes 2 tsp
Aamchur Powder 0.5 tsp
Bread Crumbs 2 tbsp+
Corn Flour 1 tbsp
For Dressing Sauce
Thick Curd 0.5 cup
Cheese Spread/ Mayonnaise (Eggless) 2 tbsp
Grated Carrot 1 tbsp
Grated Capsicum 1 tbsp
Grated Cucumber 1 tbsp
(Finely chopped)
Crushed Black Pepper 1 tsp
Red Chilli flakes 2 tsp
Salt 0.5 tsp or as per taste
- Take ans clean lobia and soak overnight (Fig 1).
- Pressure Cook lobia for 1 whistle on high and then 3-4 whistle on low flame.
- Drain and refrigerate for 1-2 hours.
- In a big bowl add boiled lobia and crush them roughly.
- Add chopped vegetables and all spices, mix well (Fig 2).
- Now mix sufficient bread crumbs for the binding purpose.
- Make medium size balls out of that (Fig 3).
- Flatten each ball giving a shape like your bread (Fig 4).
- Now in another bowl take corn flour and mix with water to make a thin dip.
- Add a pinch of salt and crushed black pepper amd mix well.
- Do the same with all cutlets and arrange in a plate (Fig 7).
- Now deep fridge the cutlets for atleast 1-2 hour.
- Now when you want to make a sandwich take cutlets out of the deep freezer and directly fry in hot oil.
- Remove on absorbent papaer.
For Dressing Sauce
- Beat the thick curd well and mix with cheese spread or mayonnaise.
- Mix well with all other ingredients (Fig 8).
- Keep aside.
For Sandwich
- Cut the bread in to half.
- Dry roast on both sides over a medium heated tawa.
- Now take the bottom piece of bread in a plate and apply dressing sauce.
- Arrange cutlet on it (Fig 9).
- Now take top piece of bread and apply little dressing sauce and cucumber slices.
- Sprinkle a pinch of salt and pepper (Fig 10).
- And place on lower piece of bread.
- Make other sandwich same way.
- Serve immediately with ketchup or dressing sauce.
Tips
For Cutlets
If you want quick cutlets you may use baked lobia available in tins in market.
Just drain them and refrigerate for some time before use.
Make the cutlets of same shape as of the bread you are using.
Deep fridge the cutlets and and fry directly in hot oil. You no need to defrost them.
Do not fry for more than a minute as everything inside does not need to be cooked.
For Dressing Sauce
To enhance the flavour you can use flavored cheese spread or mayonnaise.
Check if cheese spread or mayonnaise is suitable for vegetarians or not.
For Sandwich
Use your choice of bread. You can also try flavored bread here.
You may also use sliced onion, tomato or lettuce leaves instead of just cucumber.
Recipe- Blackberry Frozen Yogurt
Ingredients
Blackberries 7-8 nos
Ripe Banana 1 large
Sugar 3 tbsp
Thick Curd 2 cups
Milk 1 tbsp
Method
- Wash and cut the blackberries and deep freeze for an hour.
- deep freeze for an hour.
- to a smooth paste.
- Add thick curd and blend well.
- Pour in to an airtight jar and deep freeze for 3-4 hours.
- Now before serving remove from freezer and keep in refrigerator for 15 minutes.
- This will help easy scooping.
- garnish with banana and berries.
- Serve chill.
Recipe- Aam Panna (Raw Mango Squash)
Ingredients
Raw Mango 3 medium
Sugar 3 tbsp
Fresh Mint Leaves 15 nos
Hing /Asafoetida 0.5 tsp
Salt 1 tsp (or as per taste)
Black Salt 0.5 tsp
Roasted Jeera Powder 1 tsp
Method
- Take washed raw mangoes in a microwave cooking bowl.
- Fill it upto half with water and put 0.5 tsp salt.
- Cover and microwave for 7-8 minutes.
- Once boiled let it cool down.
- When cooled enough take the pulp in a blender jar.
- Add sugar, mint leaves, salt, hing and black salt.
- Blend roughly for 1-2 minutes.
- Add roasted jeera powder and microwave for 1 minute.
- Now you can refrigerate this in a airtight glass jar.
- Before serving, take 2-3 tbsp of aam panna in a serving glass and mix with water.
- Put 2-3 ice cubes and garnish with mint leaves and Serve chill.
- You can also serve this in a soda water.
- For that take 3-4 tbsp aam panna in a serving glass and add little water and mix well.
- Now pour soda water and 2-3 ice cubes and garnish with mint leaves.
- Serve immediately.
Tips
While boiling in microwave check after 7-8 minutes if not boiled keep for another 1-2 minutes.
Adjust sugar as per your taste and sourness of mango.
Its a perfect drink for summers.
Recipe- Chilled Dry Fruit Milk
Ingredients
Milk 1 liter
Sliced Almond 1 tbsp
Sliced Pistachio 1 tbsp
Saffron 1 pinch
Green Cardamom Powder 1 tsp
Crushed Black Pepper 0.5 tsp
Sugar 3 tbsp
Method
- Take milk in a heavy bottom or non stick pan.
- Let it boil on high flame.
- Once milk starts boiling turn the flame to low.
- Partially cover the pan and keep stirring at regular intervals.
- When milk is reduced to 3/4 add cgsliced almond and pistachio.
- Soak saffron in a tbsp of cold milk and add to the milk mix well.
- Add sugar and let it cook for further 15 minutes on low flame.
- Keep stirring and scrapping the side at regular intervals.
- When milk is reduced to half, switch off the flame and pour the milk in an airtight container.
- Cap the container when milk is at room temperature
- Serve chill.
Tips
Keep stirring and scrapping the side at regular intervals otherwise milk might burn.
Refrigerate only when milk is at room temperature.
Adjust sugar as per your taste.

Recipe- Veggie Wheat Steamed Dumplings

Ingredients
For Dumplings
Grated Vegetables 1 cup
(Cabbage+Bottle Gourd/Lauki+Carrot)
Whole Wheat (Aata) 0.75 cup
Semolina (Suji) 3 tbsp
Gram Flour (Besan) 3 tbsp.
Turmeric Powder 1 tsp
Ginger 1 tsp (Finely Chopped)
Green Chilli 1 tsp (Finely Chopped)
Ajwain/ Carom seeds 0.5 tsp
Jeera 0.5 tsp
Hing 1 pinch
Red chili Powder 1 tsp
Salt 1 tsp (or according to taste)
Edible Soda 0.5 tsp
Oil 1 tbsp.
For tempering
Oil 1 tbsp.
Mustard Seeds 2 tsp
Sesame Seeds 2 tsp
Method
- Take all grated vegetables in a deep bowl.
- Add sieved Aata, Suji and Besan, mix well by rubbing your hands.
- In a small bowl mix well turmeric powder, ajwain, jeera, hing, red chilli powder, salt and soda powder.
- Add this to dough with ginger, green chilli, and oil.
- Mix well and make a paste like dough.
- (you might not need to add water as vegetables has sufficient water naturally, but you may add sufficient water if you feel the dough dry)
- Now pour sufficient water in a steamer and let it heat.
- Make small sized balls out of the dough and arrange on the greased plate.
- Now steam these for 20 minutes
- Check if dumplings are cooked with the help of knife or toothpick.If knife does not have batter traces, it means dumplings are ready.
- Keep aside and let it cool completely.
- When cool cut each dumpling into four piece and keep aside.
Now when you want to serve
- Take 1 tbsp oil in a non stick pan and heat on medium flame.
- When oil is hot enough add mustard seeds and let it cracker.
- Now add sesame seed and fry until golden brown in color.
- Now add dumplings and toss on high flame until change in color.
- Cover the pan and switch off the flame.
- Open in 5 minutes and serve hot with green chutney or tamarind chutney.
Tips
Jains or others who don’t eat root vegetables, can cook this recipe without carrot and ginger.
You can use vegetables as per your choice.
Sometimes i use only 1 cup of grated lauki.
For better taste fry it just before serving.
While arranging for straming make sure to leave enough gap as they might double in size.
You can sprinkle some chopped coriander leaves while serving.
Make sure to adjust chilli if you are serving to kids.
You may also use it as a curry while dipped this dumplings in any gravy and enjoy.
Recipe- Rava Kheer
Ingredients (2 nos)
Suji 4 tbsp
Ghee 2 tsp
Sugar 4 tsp cup
Milk 4 cups
Chopped Almond 2 tsp
Chopped Pistachio 2 tsp
Raisins 2 tsp
Saffron 1 pinch
Method
- Heat ghee in a pan on medium flame.
- When ghee is hot enough add suji.
- Keep stirring Suji and fry untill golden brown.
- Remove from flame, add milk and sugar.
- Put the pan on medium flame and add saffron and nuts.
- When milk starts boiling switch the flame to low.
- Cover the pan and leave on low flame for 1-2 minutes.
- Switch off the flame and garnish with nuts.
- Serve hot.
Tips
Make it just before you need to serve. as it may set if you leave it for long.
Add nuts of your choice.
