Instructions
  1. Clean, wash and blanch spinach. Chop roughly and keep aside. Clean and wash onion and grapes, chop roughly and keep aside.
  2. Heat 1 tbsp oil in a pan. Add HIng and jeera and let it cracker.
  3. When jeera starts crackling, add chopped onion and fry until pink in color.
  4. Add green chili and fry.
  5. Add chopped spinach and fry.
  6. Add salt, red chili powder, bhuna jeera and ginger powder and fry.
  7. Switch off the gas and let it cool down completely. Mix with chopped grapes and keep aside. The stuffing is ready.
  8. Now for outer layer take boiled potato, salt, hing and bhuna jeera in a big bowl. Mash it to smooth with the help of a fork. And divide this mix in to 6 equal portions.
  9. Now take 1 portion in hand, Flatten it and make a slight grove in center.
  10. Place approx 2 tbsp stuffing in the center of tikki and fold it again to give a round shape like a cutlet or tikki.
  11. Do the same with all portions and keep aside. (You can refrigerate it now for later use)
  12. Now when you want to serve, heat a non stick pan. Shallow fry the tikkis till crisp and brown in color at low to medium flame.. (Be very careful while flipping them, it might break.)
  13. Serve Hot.
  14. You may also make tikki chaat by pouring beated little sweet curd, sweet chutney and green chutney with a sprinkle of spices like bhuna jeera, red chili powder and salt.
Recipe Notes
  • Fill the stuffing and then fold the tikki back carefully making sure its closed properly, no stuffing should come out.
  • While shallow frying, flip the tikkis carefully as they might break.
  • You may also bake it in a preheated oven till golden brown.
  • If you are fasting or do not want to use onion simply omit it from the recipe.
  • Here i used red grapes, you may use any type of grapes or pomegranate which is easily available to you.
