For Cake
  1. Preheat the oven at 180°C. Grease the baking dish with oil or butter and Keep aside.
  2. Sieve maida, milk powder, custard powder, baking powder and baking soda together for 2-3 times. Keep aside.
  3. Now take butter and sugar in another wide big bowl and mix well.
  4. Add vanilla essence and lemon juice, mix well. (It will be fluffy as you beat with lemon juice.)
  5. Gradually add dry ingredients and milk, beat well in one direction until smooth and shiny.
  6. Pour this batter in greased baking dish and bake at 180°C for 30 minutes in a preheated oven. Check with the help of knife or tooth pick, if not baked keep it for another 5-10 minutes and check again.
  7. When done take the baking dish out of the oven and let it cool down to handle. Remove cake from baking dish carefully and let it cool down completely on wired rack.
  8. Slice and serve!
For Pudding
  1. Now heat milk in a pan, and reduce it over medium to low heat up to three fourth of it. Add sugar and mix well. Switch off the heat and let it cool down a bit. (Keep stirring the milk while boiling it for pudding and keep mixing the malai/(fat) in milk.)
  2. Meanwhile slice the cake in to half inch thick pieces and arrange them in a layer in square or round dish.
  3. Pour 3-4 big spoons of reduced warm milk over the cake slices.
  4. Next arrange a layer of sliced banana, pour 1-2 tbsp of warm reduced milk over it.
  5. Again arrange another layer of sliced cake pieces and pour 4-5 big spoons of warm reduced milk over it.
  6. Garnish with slivered almond and pistachio. Cover and refrigerate for 2-3 hours.
  7. Slice and serve cool as a after dinner dessert.
Recipe Notes
  • You should beat the batter in one direction until smooth, silky and shiny.
  • You may serve the cake like that only or you may make pudding of whole cake or of just leftover cake.
  • Adjust the milk quantity for pudding if you are using just leftover cake.
  • You may also bake cupcakes/muffin out of the same batter it will take just 15 minutes to bake them.
  • Keep stirring the milk while boiling it for pudding and keep mixing the malai/(fat) in milk.
  • Pour enough warm reduced milk over the cake slices as we want them to soak generously.
  • Do not pour very hot reduced milk over the cake slices, it may result in mashed pudding.
  • Let the reduced milk cool enough, but it should be still warm enough.
  • You may also use other fruits to layer the cake just instead of banana like strawberry, cherry, apple, orange, peach or just dried nuts.
  • Make as many as layers you want.
  • Make sure your baking powder and baking soda are not too old otherwise cake will not rise well.
  • Keep the preheated oven and greased mould ready before proceeding for cake batter.
  • Pour batter immediately in mould and then put in the preheated oven.
  • Do not let batter stand outside of oven for long, it may result in hard cake.
  • Make sure all ingredients are at room temperature before use.
  • Mine cake baked in 30 minutes your may take more or less, all depends on weather condition, type of ingredients and type of oven used, so check it after 30 minutes, otherwise bake for another 5-10 minutes.
