Recipe- Cheesy Corn Spinach Sandwich

  1. Heat butter in a pan and fry maida till pink in color.
  2. Now switch off the flame and add milk stirring continuously so that no lumps form. Let the milk boil on medium flame and keep stirring at regular intervals. When a boil comes reduce the flame to low and let it cook for further 5-6 minutes.
  3. Now add salt and crushed black pepper, mix well. Add sweet corn and chopped spinach, mix well. Let it cook for further 6-7 minutes. When milk is thick in consistency add cheese slice and mix well. Cook for another 2-3 minutes keeping it stir so that no lumps can form. Filling is ready, switch off the flame, cover the pan and keep aside. And let it cool down to room temperature. You can refrigerate this filling for later use as well.
  4. Now when filling is cooled down at room temperature, Spread over a slice and cover with another slice. Grill till crisp and golden brown in color.
  5. Serve hot.
Recipe Notes
  • While making sauce do not over burn the maida, fry just to pink in color.
  • While adding milk switch off the flame and then add and mix well to avoid lumps.
  • Keep stirring at regular intervals making sure no lumps can form.
  • Boil sauce up to thick consistency.
