  1. Separate white and green part of spring onion, chop them separately and keep aside.
  2. Separate broccoli florets from stems and keep aside. Peel the stems and chop them roughly, keep aside.
  3. Wash and peel potato and diced roughly, keep aside.
  4. Peel 3-4 cloves of garlic and keep aside.
  5. Wash and chop zucchini (or Kusa/ Summer Squash/ Green Pumpkin) roughly, keep aside.
  6. Now take broccoli stems, spring onion whites, potato, garlic and zucchini in a pressure cooker. Add 0.5 tsp salt and 2 cups of water (or vegetable stock). Pressure cook on high for 1 whistle and at low for 2-3 more whistles. Switch off the fame and let it cool down.
  7. Meanwhile heat butter in a non stick pan and toss broccoli florets for 2-3 minutes with a pinch of salt then add spring onion greens and toss again. Now cover the pan and switch off the flame. Leave for 5-6 minutes.
  8. Meanwhile check the pressure cooker if cooled enough, open and transfer the mix in to a blender and blend to smooth puree.
  9. Now in the same pressure cooker, strain the puree, add 1 cup milk and let it boil.
  10. When a single boil comes, switch off the flame and add tossed broccoli florets and spring onion greens. mix well. Cover and keep aside for 2-3 minutes.
  11. Serve hot with crushed black pepper.
Recipe Notes
  • Straining of puree is important to avoid any unwanted piece.
  • Do not boil too much after adding milk, just a boil is enough.
  • Though zucchini is not available in India easily either you may substitute this with green pumpkin or just omit it. The waste will be as good as it is supposed to be.
  • You may adjust the quantity of garlic, 3-4 cloves are enough for very mild taste.
  • You may also add a small pc of ginger while boiling.
  • Vegans can substitute butter with shortening and cow’s milk with almond, soya or coconut milk.
