Recipe- Creamy and spicy Black eyed bean/Lobia Salad

Instructions
  1. Take all ingredients of dressing in a bowl and beat well. Keep aside.
  2. Now mix drained boiled lobia, capsicum (or bell peppers), cucumber, carrot, cranberries, nuts and green chili in a wide bowl.
  3. Add dressing over it and fold it lightly, make sure lobia should not mashed.
  4. Refrigerate for 4-5 minutes before serving. You may also serve as warm (Microwave for 30 seconds before serving).
  5. Cover serving bowl with lettuce leaves (Optional) and place the salad in the center. Serve and enjoy!
Recipe Notes
  • You may use any salad veggies easily available to you.
  • Adjust the chili as per your taste.
  • You may completely omit cheese spread/ mayo from the recipe.
  • If you are serving warm, do not use lettuce leaves.
  • You may also fill this salad between bread slice and make a perfect filling healthy sandwich.
  • Adjust the seasoning as per required and taste.
