Heat butter in a pan, saute garlic and spring onion whites.
Then add maida and fry till change in color.
Now add 2 cups of water and 1 cup of milk, keep it stir at this time until it starts boiling otherwise it may curdle and lumpy too.
When it starts boiling, add grated cucumber and carrot with pepper and salt. Mix well and let it cook covered for another 10 minutes while stirring at regular intervals.
When done serve Hot.

Be careful while adding milk, keep it stirring to avoid lumps or curdling.
Vegans can substitute butter with shortening or oil and cow's milk with almond, soya or coconut milk.
To increase the richness of the soup, you may top it with some cream, before serving.
Adjust pepper and salt as per requirement.
If serving to kids, adjust seasoning as per their tolerance.
