Instructions
  1. Preheat the oven at 200°C. Grease the baking dish with oil or butter and Keep aside.
  2. Take all fruits and nuts in a big bowl. (It should be around 2 cups) Dust 1 tbsp maida and mix well with spoon so that all fruits and nuts coated well with maida. Keep aside.
  3. Sieve 3 times all dry ingredients (maida, baking powder and baking soda) together. Keep aside.
  4. In another bowl take condense milk, butter and vanilla essence. Mix well for no lumps. Keep aside.
  5. Now add all dry ingredients over the fruits and mix well. Mix soda water to the condense milk and butter mix and beat well. Now add this mix to maida and fold gently. Some of the fruits might mash while folding, and that is okay.
  6. Pour the mix in greased baking dish and bake at 200°C for 35-40 minutes. Check with the help of knife or tooth pick, if not baked keep it for another 2-3 minutes and check again.
  7. When done take the baking dish out of the oven and let it cool down to handle. Unmold carefully and let it cool down completely on wired rack.
  8. Cut in to slices and Serve with tea of coffee.
Recipe Notes
  • Make sure your baking powder and baking soda are not too old otherwise cake will not rise well.
  • It is advised to sift all the dry ingredients together for 2-3 times for fluffy and soft result, as it helps to incorporate air in batter.
  • Keep the preheated oven and greased mould ready before proceeding.
  • Pour mix immediately in mould and then put in the preheated oven.
  • Do not let mix stand outside of oven for long, it may result in hard cake.
  • Make sure all ingredients are at room temperature before use.
  • While folding dry and wet ingredients some fruits might mash, but that is okay.
  • You may choose the fruits or nuts easily available to you.
  • The total quantity of fruits and nuts used should be approx 2 cups.
  • Add soda water to condense milk mix, just before mixing to the dry ingredients.
  • You can have variety of fruits and nuts like almond, walnut, raisin, plum, berry, apple, pear, apricot etc.
