Recipe- Homemade Multigrain Wholemeal Bread

  1. In a wide big bowl take luke warm water, sugar and dry yeast, mix, cover and keep aside for 10-15 minutes.
  2. Meanwhile sieve maida, gehu aata, rice aata and salt all together in another bowl and keep aside.
  3. Now add Flax seeds, Sunflower seeds, Chia seeds and mix well.
  4. Add oil and mix nicely, while rubbing in between your palm. Keep aside.
  5. Now check if the yeast mix has been active. For that it should looks frothy and bubbles over surface.
  6. Now gradually add dry ingredients to the yeast and mix well. Initially you will feel like sticky, but keep kneading it until it leaves sides and stops sticking to hands.
  7. When done, shape the dough like a ball and grease it, store in a greased big bowl. Cover with a cling film (making sure no air can go inside). And leave in a warm place for 1hour or until the dough has raised enough.
  8. Meanwhile grease a loaf pan and keep aside.
  9. Now after 1 hour check the dough, it must has been raised more than double if its actual size. Punch it and knead again and shape the dough like a bread loaf.
  10. Now place the dough in a greased loaf pan, grease the top with some oil. (At this time you may also sprinkle some seeds on the top). Cover with cling film and again keep in warm place for 15-20 minutes.
  11. Meanwhile preheat the oven at 180°C.
  12. Check bread loaf after 20 minutes, it should have been raised by then. Remove the cling film and bake it in a preheated oven at 180°C for 45 minutes or until golden brown in color.
  13. To check, take it out and tap it should sound hollow. otherwise bake it for another 4-5 minutes and check again.
  14. When done take it out of the oven, let it cool down to handle, brush the top with some butter and cover it completely with aluminium foil and let it cooled down completely.
  15. When it reach at room temperature, remove the aluminum foil, take the loaf out of the pan and keep on grill for 10 minutes. Store in a airtight container or poly bag.
  16. Slice as required (only when it is cooled to room temperature).

Recipe Notes
  • First of all check, if yeast is not bubbled, discard it. That means yeast is not good or it might be very old to use.
  • Be patient while kneading the dough, as it takes time as well work hard to knead until smooth. (It might take 20-30 good minutes of kneading)
  • You may also add other flavors to your bread (choice of spices or herbs while sifting maida).
  • Keep the preheated oven and greased tin ready.
  • Make sure all ingredients are at room temperature before use.
  • Baking is always a hit and trial method as the baking time and temperature may vary on different weather conditions, the type of oven, the quality of maida and yeast. So don’t worry if you do no get it right in first attempt. Keep trying and surely you will be successful next time :).
  • My bread took 45 minutes to be baked, your may take more or less, all depends on weather condition, type of ingredients and type of oven used, so check it after 35 minutes, otherwise bake for another 5-10 minutes.
