Heat ghee (or oil) in a non stick pan. Add jeera and let it cracker.
Fry bay leaves, clove, cinnamon and whole black pepper.
Add turmeric powder and red chili powder and coriander powder, fry.
Add grated lauki and fry for few seconds on high flame.
Add drained rice and salt, mix lightly. Then add 1 cup of water and let it boil, when a boil comes, cover the pan and cook it for 15-16 minutes or until done at low flame.
Cheak if rice is cooked, switch off the flame and garnish with aamchur powder, red chili powder and bhuna jeera powder.
Serve hot with curd, green chutney, imli chutney and papad.
Recipe Notes
If you want to make the recipe simple and more healthy reduce the quantity of red chili powder.
If serving to kids adjust the spices according to them.
If you want to make it more spicy, fry green chili also with spices.
You may also fry sliced onion with spices.
Rice should be soaked in water for atleast 30 minutes before use.
