Recipe- Leftover Khichdi Cheese Balls
Mashed khichdi balls with some potato, onion and spices, center filled with Mozzarella cubes and fried to crisp.

  1. Here i had 1 cup of leftover Pongal (South Indian Dhuli Moong Daal Khichdi tempered with Cashew, Green Chili, Ginger and Jeera) You may use any kind of khichdi available to you.
  2. Take it in a wide bowl and mesh it nicely with a fork.
  3. Now add boiled potato and mash it also with khichdi using a fork. (You may also grate the boiled potato)
  4. Now add chopped onion and salt. Mix well. (Here i used pongal in which i already had cashew, green chili and ginger. So i did not put any additional spice. You may put chopped green chili, ginger or any other spice as per your taste)
  5. Now take a small portion, flatten it and place a cheese cube in center.
  6. Now seal it and roll it in a ball shape.
  7. Do the same with all and keep all cheese balls aside. Meanwhile heat sufficient oil in a pan to fry.
  8. When oil is hot, fry cheese balls initially on high flame and then on low medium flame.
  9. Remove them on absorbent paper.
  10. Serve hot with green chutney or ketchup.
  11. Enjoy!
  12. You may also coat the balls in besan and fry to crisp.
Recipe Notes
  • Here i used lefover pongal (South Indian Dhuli Moong Daal Khichdi tempered with Cashew, Green Chili, Ginger and Jeera).
  • You may use any type of leftover rice dish like pulav or khichdi, just add spices as required and mash it to smooth.
  • You may also add fine chopped vegetables (capsicum/ carrot/ beans/ peas) to the mix.
  • While frying make sure, do not fry more than 3-4 balls (according to the size of your pan) at a time, as they might break.
  • You may also coat them in besan and fry to crisp.
