Instructions
  1. Wash and soak small sabudana in enough water for 2-3 hours.
  2. After 2-3 hours you will see it has absorbed water and bigger in size, now drain the excessive water and keep aside. (it will yield about 1.25 cup of soaked sabudana).
  3. Now heat milk in a non stick pan and let it boil.
  4. Meanwhile wash, cut and puree mango, (it will yield about 0.75 to 1 cup of puree). Keep aside.
  5. Now when milk starts boiling, add mango puree and mix well.
  6. Now add soaked sabudana and mix well. Now reduce the flame, partially cover the pan and let it cook for about 15-20 minutes or until sabudana cooks completely and looks transparent, (You may also add some milk, if sabudana is not cooked and kheer is already thick.) The final consistency should be thick pouring. (keep stirring at regular intervals)
  7. Now switch off the flame add sugar, elaichi powder and food color (optional), mix well.
  8. Now pour the kheer in to small pudding bowls and let it cooled down to room temperature and then cover with cling film and refrigerate for 4-5 hours or until chill.
  9. Transfer the pudding carefully with the help of knife over a plate, garnish with fresh mango cubes or some dried nuts/ fruits and serve.
  10. Or just garnish with fresh mango cubes or some dried nuts/ fruits and serve in the same pudding bowl as well.
  11. You may also make ice cream pops of it and give a healthy, nutritious treat to your kids.
Recipe Notes
  • Adjust sugar as per sweetness of mango.
  • Stirring of milk after adding sabudana s important to avoid any lumps and burns.
  • Food color is optional, you mal also add a pinch or turmeric powder for natural coloring.
  • Garnish with any chopped fresh fruit/ dried fruit/dried nut etc and serve.
  • For best taste serve chill.
  • You may also make this in any other flavor than mango, like strawberry/ peach/ apple/ vanilla etc...
