Instructions
Heat oil in a pan, add hing and jeera. let it cracker.
Add green chili and ginger, fry.
Add red chili powder, haldi powder, dhaniya powder and besan, fry till brown.
Add potato, salt and aamchur powder, toss well.
Cover the pan and reduce the flame to low. Leave it for 15 minutes.
Check if potato is done, switch off the flame and sprinkle some chaat masala.
Serve hot with poori, chapatti, paratha, naan or rice. Enjoy!

Adjust spices as per your taste.
If serving to kids, adjust chili as per their tolerance.
If fasting check the ingredients as per your fasting rules.
Fry besan and masla til brown in color, otherwise uncooked besan aroma may come.
