Wash and wipe kantola, then dice and keep aside. Dice onion also and keep aside. Chop green chili and keep aside.
Heat oil in a pan, add hing and jeera. When jeera starts crackling, add haldi powder, red chili powder and coriander powder. Fry till golden brown in color.
Now add diced onion and fry till pink in color.
Now add chopped green chili and fry.
Now add diced kantola and salt. toss well. Cover tha pan and reduce the flame to low. Let it cook for 10-15 minutes or until done.
Check in 15 minutes if done toss well again on high flame for 1 minute so that it become crispy.
Garnish with chopped green chili and serve hot with roti, naan, paratha or rice.
