To prepare filling, heat 1 tbsp butter in a non stick pan, add 1 tbsp maida and fry till pink in color.
Now take the pan out of the flame and add 1 cup milk, keep it stirring for no lumps.
Now put the pan on high flame and let it boil (keep it stirring until a boil comes).
When it starts boiling reduced the flame to low and add salt, chili flakes and crushed black pepper. Mix well.
Now add chopped spinach and mix well.
Add chopped bell pepper, baby corn and sweet corn, mix well.
Cover the pan and leave for 7-8 minutes at low flame.
Now open the pan and add 2 cheese slice, mix well.
Switch off the flame and cover the pan.
Keep aside.
The spinach vegetable white sauce is ready.
Now preheat the oven at 180°C.
Meanwhile cut all the 16 bread slices in to round shape, using a cookie cutter or a sharp edged bowl.
(Do not discard the scrap as you may use it to make bread poha or bread crumbs)
Now take one size smaller cookie cutter or any small sized bowl and cut 8 round bread in to smaller size.
Now you have 3 type of breads, 1 large circle, 2 ring and 3 small circle, Keep all of them aside.
Now arrange all 8 large circles of bread on the baking tray and spread cheese spread and then tomato ketchup.
Now arrange the bread rings over it to give a look like a cup.
Now fill 1-2 tbsp of spinach vegetable white sauce in each cup.
Sprinkle some chopped olives and top with small pieces of cheese slice.
Now if you want to use the small circles of bread for other recipes that fine, otherwise you may use it same way.
Apply cheese spread and then tomato ketchup over it and then place some spinach vegetable white sauce, top with some chopped olives.
Now bake all of them at 180°C in a preheated oven for 10-15 minutes or until golden brown and crisp.
Serve hot. Enjoy!
Recipe Notes
While making Spinach white sauce do not over burn the maida.
While adding milk switch off the flame to avoid lumps.
Keep stirring at regular intervals making sure no lumps can form.
