Recipe- Strawberry Choco Vegan Cake

  1. Preheat the oven at 180°C. Grease the baking dish with oil. Keep aside.
  2. Wash the strawberries and wipe with a clean kitchen towel. Cut in to half and discard the stem part. Keep aside few strawberry halves for decoration.
  3. Now take strawberries and sugar in a blender jar. Blend till smooth paste. This should be around 1-1.25 cups if less add some more strawberries and puree it. Add oil and blend again for few seconds.
  4. Now in another bowl sieve together Maida, Baking powder, baking soda and choco powder for 3 times.
  5. Fold these dry ingredients in to strawberry puree.
  6. Fill the mix in a greased baking dish and decorate with few strawberries halves on top.
  7. Bake at 180 C for 25 minutes. Check with the help of knife or tooth pick, if not baked keep it for another 2-3 minutes and check again.
  8. When done take the baking dish out of the oven and let it cool completely. Unmould carefully only when cake is at room temperature.
  9. Cut the slice garnish with vegan chocolate syrup and Serve!
Recipe Notes
  • Make sure your baking powder and baking soda are not too old otherwise cake will not rise well.
  • It is advised to sift all the dry ingredients together for 2-3 times for fluffy and soft result, as it helps to incorporate air in batter.
  • Keep the preheated oven and greased mould ready before proceeding.
  • Pour mix immediately in mould and then put in the preheated oven.
  • Do not let mix stand outside of oven for long, it may result in hard cake.
  • Make sure all ingredients are at room temperature before use.
  • While folding dry and wet ingredients make sure there are no lumps.
