Recipe- Vegan Blueberry Banana Muffin

  1. Preheat the oven at 180°C. Grease the muffin mould with oil. Keep aside.
  2. Now take all dry ingredients (Maida, Salt, Baking Soda and Baking Powder) in a bowl and sift all together 3 times. (This will help retain the mixture porous)
  3. In a deep bowl beat banana, sugar, oil and vanilla essence with a fork until smooth. (It may take approx 4-5 minutes.)
  4. Now add dry ingredients to it and mix well. It will be like a dough. Now add blueberries and crush them and mix with dough.
  5. Fill greased muffin mould with this mixture up to 3/4.
  6. Bake them in a preheated oven at 180°C for 30 minutes. Check with the help of knife or tooth pick, if not baked keep it for another 5 minutes and check again.
  7. When done let them cool down for 5 minutes then remove from the mould and allow to cool down on wired rack.
  8. Serve warm.
  9. Or you may top with any vegan icing and serve.
Recipe Notes
  • Make sure your baking powder and baking soda are not too old otherwise cake will not rise well.
  • Keep the preheated oven and greased mould ready before proceeding for muffins.
  • Pour mix immediately in mould and then put in the preheated oven.
  • Do not let mix stand outside of oven for long, it may result in hard muffins.
  • Make sure all ingredients are at room temperature before use.
